Twin Walled Polycaronate for under walkable solar panels. You can find 4mm which is also effective and thinner.
MC4 inline fuses - best to use coming out of each solar panel on the positive line so if one goes bad the whole array doesn't go down.
For mounting J channels and walkable solar panels directly: 3M Double sided VHB (Very High Bond) tape for mounting flexible solar panels, semi-rigid panels, and the J extrusion semi-rigid mounting kits (same tape used for mounting automotive molding) and high temperature, you may prefer thinner but this gives you a starting point: 3M's VHB (very high bond) tape 5952 similar to what is used for automotive molding.

Clear adhesive silicone sealant for damaged walk on semi rigid flexible solar panels - good for sealing up any laminate cracks in a flexible or semi rigid solar panel
